Better be hungry. These half pound plus burgers are really big. Of course you can always split or make smaller hamburgers for a larger group. 6 half-pound, 9 third-pound, 12 quarter-pound burger or any size. But this green chile burger recipe is really for man-sized burgers.
You may modify ingredients to your taste. If you like more heat, replace the Anaheim chiles with hot New Mexico Hatch green chiles or other preferred. You can always add a couple of teaspoons of red chile flakes instead.

Green Chile Burger Ingredients
3 Pounds of lean ground beef (chuck is best) 10? Green Anaheim green chile peppers 1/4 Cup of fresh cilantro (chopped) 1 Cup of Mayonnaise 3 Tablespoons of chopped onion 2 Cloves of garlic (minced) 1 Teaspoon of dried oregano 6 Slices of jalapeno pepper jack cheese Hamburger buns large enough for 1/2 pound burgers
Preparation and Cooking Directions
1. Roasting and Preparing Green Chiles. Preheat oven to 500 degrees F. Place chiles in a baking pan and broil. Turn often until chiles are golden browned on all sides. A little charring is okay. It gives add flavor. When done, seal chiles in a plastic bag until cooled enough to handle. Then remove stems, most of the seeds, and peel. As a option use canned whole green chile that are already prepared. Just heat or roast them when ready to serve the finished burgers.
2. Place ground beef in a large bowl. Sprinkle chopped onions, minced garlic, and dried oregano evenly over the ground beef. Gently mix ingredients being careful not to over-work the meat.
Divide mixture into 6 equal balls and flatten to the desired thickness to equal 6 patties of approximately 1/2 pound each. Adjust size and number of patties if you prefer smaller green chile hamburgers.
